The history of kefir is really fascinating! It originated in the Caucaus Mountains and its roots can be traced back over 2000 years ago to the prophet Mohammed who, as the story goes, gave kefir grains to the Orthodox people. At this time kefir grains were an extremely precious commodity, regarded as part of a family’s wealth and passed on from generation to generation.
For centuries it was little known outside this region and production was restricted entirely to private residences. It was not until early this century that kefir started to be produced outside of the family home. While production scale may have increased, the recipe which Yorlife uses has not changed much from the early days of kefir. So, let’s find out more about their miracle milk!
YORLIFE KEFIR: GOOD BACTERIA FOR YOUR GUT
The name originates from the word “keif” which literally translates to “good feeling”, which is a pretty accurate summary of how you feel after drinking Yorlife!
Kefir is a fermented drink, made by adding kefir grains to milk and allowing it to ferment. But what is a Kefir grain? They aren’t actually grains, they‘re live cultures of yeast and lactic acid which look a bit like cauliflower. These grains ferment and “culture” the milk, growing lots of the good bacteria we need to keep our internal eco systems running efficiently. The grains are then removed and can be used again and again as they are living organism!
You have probably heard how good probiotic yogurt is for your gut health. A typical tub of these yogurts contains between one and two cultures and a typical 250ml serving of Yorlife Kefir contains almost 50! Yorlife Kefir is made by adding the live kefir cultures to pasteurised milk (they pasteurise before they add the grains not after like many other brands of Kefir as this would kill the good bacteria) and leaving the mix to ferment for 24 hours in a temperature controlled environment. They then split the mixture and add natural fruit to create their different delicious flavours, keeping aside some for our pure kefir drink. They still only use the milk from their own herd of Friesian cows and they only ever add entirely natural fruits to any of their Kefir.
