Focaccia is one of Italy’s greatest recipes and a genuine symbol of the Italian art of baking. Perfect for a party or a family dinner, this light and fluffy one will become your favourite snack! So, here below what you’ll need for a delicious Focaccia with Tomatoes recipe:
INGREDIENTS: (12 servings)
- 2 cups all-purpose flour
- ¼ oz active dry yeast
- 1 cup warm water
- 2 tablespoons extra virgin olive oil
- 2 plum tomatoes, sliced
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Dash pepper
- In a large bowl, dissolve yeast in the warm water. Then add 1 tablespoon oil, salt, sugar, garlic powder, oregano, pepper and 1-1/2 cups flour. Beat until smooth. Stir in the remaining flour to form a soft dough (it will be sticky). Leave it to rise in a warm place for about 1 hour, covered with a dish towel.
- Shape the dough into a 13-in. x 9-in. rectangle. Place on a greased baking sheet, cover and let it rise until doubled (about 30 minutes). With fingertips, make several dimples over top of dough.
- Brush the dough with the remaining extra virgin oil. Add on top the sliced tomatoes and sprinkle with oregano. Bake at 180° for 20-25 minutes or until golden brown. Remove to a wire rack.
Freeze option: You can freeze cooled focaccia squares in freezer containers, separating layers with waxed paper. Then reheat squares on a baking sheet in a preheated 180° oven until heated through.
