For the Base
200g Ground Almonds
7 Tablespoons Melted Coconut Oil
3 Tablespoons Water
20 Medjool Dates
2 Tablespoons Coconut Oil
2 Tablespoons Smooth Peanut Butter
1 Teaspoon Vanilla Essence
1 Teaspoon Ground Cinnamon
½ Tablespoon Maple Syrup
Top with Granola
100g Melted Dark Chocolate
– Add all of the base ingredients into a food processor.
– Blend until combined. It should be a dry mixture that sticks together when pressed. You might need to add another tablespoon of water to achieve this.
-Place into a lined baking tray and press the mixture down using your hands.
-Blend all the caramel layer ingredients in a food processor. If the mixture is too thick you can add a tablespoon of water and blend again to loosen
– Spread the caramel mixture over the oaty base evenly using the back of a spoon.
-Core the apples and add to the food processor with the cinnamon and maple syrup. Spread the apple mixture over the caramel layer.
-If using granola, sprinkle over the top and place in the fridge to set for 30 – 45 minutes.
-Melt the dark chocolate using a double boiler.
-Remove from fridge and cut into slabs.
-Finally drizzle the melted chocolate over the top.
Store in the fridge using an airtight container for up to a week.. But they won’t last that long!
