What is Miso?
Clearspring miso is made in the traditional way, where it is slowly aged and fermented in cedarwood kegs. The slow fermentation results in a seasoning with rich and complex flavours and an abundance of the fifth taste, umami. Miso is made from different types of grains but mainly soya and a unique koji fermentation culture. Just like wine, there are many different varieties. The darker the colour, the richer the flavour, great for adding into soups, casseroles. Lighter varieties are good for sweet recipes. You don’t need to cook miso either, it’s fantastic to use as it is in a dip or dressing. Plus, you get all the benefits preserving the nutrients by not heating it!
